Happy Tuesday! We're changing things up for today's dinner and doing Tex-Mex Tuesday. This new thing offers the perfect opportunity to enjoy a delicious chicken quesadilla for breakfast and lunch and a shrimp taco for dinner. We're preparing the Mexican-Inspired Shrimp Tacos with Crunchy Coleslaw and Garlic-Lime Crema from our HelloFresh box.

For all three meals, I opted to use the tortilla we got from Costco earlier this month. The smaller tortilla from the HelloFresh kit will go back to the fridge for a quick snack or breakfast this week.

Because I used a 10-inch tortilla, we had to eat one giant taco instead of three more miniature tacos using a 6-inch tortilla. It was messy and fun to eat. The slaw had a slight bitterness, and I couldn't pinpoint where it was coming from. The shrimp was succulent, and I loved the tartness of the lime.
