This meal is so delicious! The rice cooked in butter, garlic, enchilada spice blend, and chicken broth is the perfect fluffy base for the other components of the dish. Meanwhile, the veggies (red onions, sweet bell pepper, and corn kernels) are slightly caramelized, providing sweetness and a satisfying crunch. The star of the show is the smoky and spicy chipotle turkey and bright and tangy pickled jalapenos. They're so good together! Of course, no burrito bowl is complete without guacamole; this one is no exception. It is rich and creamy, adding another texture to the dish.
