It's a beautiful Thursday evening in Vancouver, and for dinner, we decided to visit Taishoken Ramen, a cozy spot. I consider them to have the best kara miso ramen in the City.
We decided to kick off the evening with okonomi gyoza. Their thin golden-brown exteriors and juicy flavour-packed interiors signal the beginning of an evening of gastronomic bliss.

After a lengthy discussion with my husband, we settled on the two items marked as "signature" and "original." I got the Tsukemen and chose karamiso as my broth. Imagine broad, chewy noodles, each strand providing the perfect resistance as it took a delightful dip into rich, spicy kara miso broth. Meanwhile, the slices of pork chashu melted in the mouth, complementing the savoury broth. I am satisfied.

Meanwhile, my husband went for the tonkatsu ramen. Picture this: golden, rich pork and chicken broth, a velvety elixir that coated the springy noodles. Top that with the same tender pork chashu, crispy bamboo shoots, and umami bomb seaweed, and you get comfort in a bowl.

We left the ramen shop with our bellies full and spirits satisfied. Thank God for Thursday!
